An easy and quick recipe packed with an array of vitamins, minerals and antioxidants to support our immunity at this vital time!
Serves 4
1kg carrots (chopped)
4 garlic cloves (crushed)
2 thumb size cubes/40g of ginger (chopped)
4 tsp turmeric
1 whole lemon (juiced)
2 red peppers (sliced)
1 large handful of coriander (to top)
1 large handful of seeds (to top)
Add all ingredients except the stock to a frying pan and cook for 5 minutes
Then add the stock and leave to simmer for 20 minutes.
Blend with a handheld blender or in a food processor and top with coriander, seeds and chilli flakes
