If I told you these Sweet & Sour and Chow Mein dishes were made with all nourishing simple ingredients would you believe me?
Because they absolutely are! And they are the perfect treat for the weekend to cook up in your kitchen to give you all the takeaway vibes but with a nourishing meal.
SWEET & SOUR
INGREDIENTS
2 fillets of chicken/1 pack of tofu/prawns
1 red pepper
1 yellow pepper
1 can of pineapple
The juice from the can of pineapple (opt for 100% pineapple juice can)
3 tbsp coconut sugar
1/4 cup apple cider vinegar
1/2 cup passata
4 cloves of garlic
RECIPE
To make the sauce, blend all of the sauce ingredients in a blender and leave to one side
Heat 1 tbsp of coconut oil and fry the chicken/tofu/prawns until cooked/golden brown
Add the peppers and pineapple and sauce until soft (around 5 mins)
Add in the sauce and cook for a further 2 minutes
Enjoy!
CHOW MEIN
INGREDIENTS;
200g wholewheat noodles
1 tsp five spice powder
1 tbsp coconut oil
1 chunk of ginger grated
3 garlic cloves grates
100g mushrooms slices
200g sugar snap peas
3 cups bean sprouts
2 tbsp soy sauce
1 tbsp sesame oil
Fresh coriander & lime to serve
RECIPE
Cook the noodles according to pack instructions
Add coconut oil to a pan with the garlic & ginger. Cook for 1 minute
Add the sugar snap peas, mushrooms & bean sprouts and cook for 2 minutes
Add the soy sauce and sesame oil and noodles and cook for 2 more minutes
Serve with a squeeze of lime & fresh coriander
