With the end of October fast approaching I thought it was about time I shared a delicious Autumn recipe, and what better place to start than a pumpkin latte?!
This latte is made using chicory root – the new coffee alternative which is caffeine free but still has the rich roasted flavour that coffee does so works so well for people like me who cant drink any caffeine.
Chicory root is probably one of my favourite discovered ingredients of the year because of its amazing benefits including regulation of the thyroid gland, aiding gut health through its prebitoic insulin & helping to protect the liver from free radical damage.

3 tsp chicory root (I brought mine from here)
1 cup of oat milk
2 tbsp pumpkin puree (I brought mine from here)
1 tbsp coconut sugar
1 tsp all spice
1/2 tsp ginger
Cinnamon to serve
Mix the chicory root with half a cup of boiling water and pour into a sauce pan.
Add all the other ingredients into the sauce pan and turn heat onto medium.
Using a whisk or hand held blender, mix all the ingredients until a clear consistency is reached.
Froth the milk with the blender/whisk.
Using a spoon, pour the drink into your cup holding back the froth until the top.
Sprinkle cinnamon on top & serve!
