Over the next few weeks I’m going to be concentrating on seasonal cooking so I thought I’d get started with a simple recipe with focus onto one of the nations favourite fruits that is now in season and a staple breakfast.
Behold my sweet fig jam made using natural goodness from cooked figs, honey, coconut sugar & chia seeds with absolutely no refined sugar which you would find tons of in preserved jams from supermarkets.
Figs are packed with fiber so are amazing for the digestive system and the chia seeds add additional digestive system support. The honey and coconut sugar mixed together add a sweet caramel flavour to the jam which tastes perfect with fresh bread.
(to make 1 jar)
6 figs
2 tbsp. honey
2 tbsp. coconut sugar
2 tbsp. chia seeds
Cut the figs into quarters and place in a saucepan on a medium heat with a 2 tbsp. water.
leave to warm for a couple of minutes before adding the honey and coconut sugar.
Continuously stir and slightly squish the mixture whilst cooking for around 8 minutes.
Take the sauce pan off the hob and add 2 tbsp. chia.
Transfer the mixture into a jar and place into the fridge for 30 minutes before serving with fresh toasted bread!
