Ive been trying to perfect my matcha pancake recipe for a while and I think I am finally here! Packed with protein from the buckwheat, hemp and egg & antioxidants from the matcha making them the ideal way to start your day!
-1.5 cups almond milk
-3 tbsp coconut sugar
-3 tbsp coconut oil
-2 cups of buckwheat flour
-3 tbsp matcha powder
-2 tbsp hemp protein powder
-Extra coconut oil for cooking
Mix together the egg, milk, sugar and oil with an electirc whisk
Next add the dry ingredients – flour, matcha powder and hemp powder and mix again
Melt 1 tbsp coconut oil on a med-high heat before adding 3 tbsp of the batter to the pan and cooking until lightly golden on each side!
Serve with your favourite toppings – I used nectarines, honey, cacao nibs & granola YUM
